Lemon Meringue Granola Crust Pie

As summer rolls in, so does the craving for something bright, refreshing, and utterly delightful. Whether you’re hosting a backyard barbecue, celebrating a special occasion, or simply treating yourself to a slice of happiness, this Lemon Meringue Granola Crust Pie is the perfect dessert for summer.  This is not your ordinary pie crust! Our Lemon Drop Granola kicks up the flavor a notch with hints of lemon, nutty richness, and the sweet creaminess of white chocolate. Picture this: a crunchy, slightly sweet base made of oats and nuts that provides the perfect contrast to the tangy lemon filling—a whole new dimension to the classic pie experience. With just the right balance of tartness and sweetness, it’s like a burst of sunshine on your taste buds.

Ingredients:

Crust:

  • 1 bag of Little Red Wagon Lemon Drop Granola, divided. Save ¼ cup to ½ cup for garnish
  • 3 tbsp of melted coconut oil 
  • 1 tsp of vanilla extract
  • 1 egg white

Lemon pie filling:

  • 1 14 oz can of sweetened condensed milk 
  • 4 large egg yolks 
  • ½ cup of plain Greek yogurt
  • ½ cup of fresh lemon juice
  • 2  tbsp of grated lemon zest

Optional: Fresh cream for pipping

  • ½ cup heavy cream or heavy whipping cream
  • 1 tbsp confectioner sugar or granulated sugar
  • ¼ tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F.
  2. Place 2 cups of Lemon Drop Granola in a food processor and process until the almonds and white chocolate chips are fine crumbs.  
  3. Place in a bowl and add coconut oil, vanilla, and egg white. Mix until well incorporated.
  4. Press mixture uniformly into pie pan. 
  5. In a large mixing bowl, beat the egg yolks until they are combined and light in color. Add in sweetened condensed milk and beat until combined
  6. Whisk in lemon juice, zest, and Greek yogurt. Pour into cooled pie crust and bake for 15 minutes.
  7. Remove from oven and let cool to room temperature.
  8. Place in fridge until ready to serve.
  9. Optional: In a stand mixer, whip fresh cream with sugar and vanilla extract for about 4 minutes at medium-high speed until it reaches medium peaks. Add to a piping bag and pipe a decorative pattern on the pie.
  10. Sprinkle with reserved Lemon Drop Granola.
  11. Enjoy!
