Blackberry Lemon Drop Mousse Recipe

As June rolls in and summer arrives, I hope you have a moment to slow down and enjoy all that summer has to offer. This summer, I am looking forward to enjoying the sunshine, summer adventures, and cooking with all the fresh produce and fruits that summer harvests bring. If you are looking for a no-bake dessert option for your summer cookouts or dinner party, check out our Blackberry Lemon Drop Mousse recipe. This dessert blends the tangy sweetness of ripe blackberries with the zesty brightness of lemon and is topped with a crunchy layer of granola. It is a spoonful of sunshine, sweet, refreshing, and delicious!

Blackberries are my favorite berry, and I try to enjoy them daily when they are in season. Whether you’re lucky enough to have a blackberry bush in your yard or you snag them from the farmer’s market, there’s no denying that blackberries are a great no-guilt treat. In this recipe, blackberries offer a perfect complement to the lemon mousse. Our Lemon Drop Granola adds a new layer to the flavor profile. Sprinkle it on top of your mousse to add an extra dose of texture, hints of citrus, and velvety white chocolate.

  1. Add heavy cream, sugar, and salt to a stand mixer. Whip for 2 to 3 minutes on medium speed until peaks form.
  2. Gently fold lemon curd and lemon zest until completely incorporated.
  3. Divide the mixture into 8 small dessert glasses or 4 medium-sized dessert glasses, alternating scoops with blackberries.
  4. Refrigerate for at least 1 hour or up to 24 hours to allow mousse to chill. Once chilled and ready to serve, garnish with granola and remaining blackberries.
  5. Enjoy!
