Blackberries are my favorite berry, and I try to enjoy them daily when they are in season. Whether you’re lucky enough to have a blackberry bush in your yard or you snag them from the farmer’s market, there’s no denying that blackberries are a great no-guilt treat. In this recipe, blackberries offer a perfect complement to the lemon mousse. Our Lemon Drop Granola adds a new layer to the flavor profile. Sprinkle it on top of your mousse to add an extra dose of texture, hints of citrus, and velvety white chocolate.
Ingredients:
- 2 cups of heavy cream
- 2 tablespoons confectioner sugar
- A pinch of salt
- 1 cup of lemon curd
- 1 tablespoon of lemon zest
- 1 cup of fresh blackberries
- 1 cup of Lemon Drop granola
Instructions:
- Add heavy cream, sugar, and salt to a stand mixer. Whip for 2 to 3 minutes on medium speed until peaks form.
- Gently fold lemon curd and lemon zest until completely incorporated.
- Divide the mixture into 8 small dessert glasses or 4 medium-sized dessert glasses, alternating scoops with blackberries.
- Refrigerate for at least 1 hour or up to 24 hours to allow mousse to chill. Once chilled and ready to serve, garnish with granola and remaining blackberries.
