Pumpkin Spice Parfait

As the crisp autumn air settles in, one of the most iconic tastes of fall is pumpkin spice, a blend of cinnamon, nutmeg, ginger, and cloves that evokes warmth and comfort. If you’re looking for a delicious and easy way to enjoy those fall flavors, a pumpkin spice parfait is ideal for breakfast or a snack.

Our pumpkin spice parfait layers creamy yogurt, spiced pumpkin puree, and crunchy granola for a satisfying and nutrient-rich treat.  Greek yogurt is a protein-packed base that balances out the sweetness of the pumpkin. Simply mix pumpkin puree with pumpkin spice and alternate layers with granola, maple syrup, and yogurt.

Not only is this parfait delicious, but it’s also a wholesome choice.  The yogurt provides protein and probiotics, the pumpkin is rich in vitamins like A and C, and the granola offers healthy fats and fiber.  This perfect balance of nutrients makes it an energizing breakfast option or a satisfying afternoon snack.

Ingredients:

  • 1 15 oz can of pumpkin purée
  • 2 cups of vanilla or plain Greek yogurt
  • 2 tsp pumpkin/pumpkin pie spice
  • 1 1/2 cup of Little Red Wagon Pumpkin Patch granola
  • 4 tsp maple syrup

Instructions: 

  1. In a bowl, stir together pumpkin puree, 1/2 cup of yogurt, and spices.
  2. In wide-mouth glass of your choice, layer with pumpkin mixture, followed by granola, maple syrup, and then yogurt.  Repeat layers of pumpkin mixture, granola, maple syrup, and yogurt until ingredients are used or the cup is full.  Sprinkle the top of the glass with granola and a drizzle of maple syrup.
  3. Enjoy!
