Carrot Cake Truffles

Our no-bake Carrot Cake Truffles are the sweet and wholesome snack fix you’ve been craving. They’re a little indulgent, a little nourishing, and totally craveable. Packed with nutritious ingredients like carrots, dates, chia seeds, and walnuts, they sneak in protein, veggies, and fiber while satisfying that sweet tooth. And the best part? It comes together in minutes with no oven. Make a batch on Sunday, and you’ve got grab-and-go snacks all week. They can also be dressed up with a vanilla candy shell and a sprinkle of our Original granola. 

Whether you’re trying to sneak more veggies into the snack routine or just need a better-for-you treat that still feels like dessert, this recipe hits all the right notes. From our kitchen to yours, cheers to savoring the small stuff, one bite and one truffle at a time.

Ingredients:

  • 1-1/2 cup of walnuts
  • 1 cup of shredded carrots
  • 1/2 tsp cinnamon
  • 8 pitted dates
  • 1/2 shredded coconut
  • 1/2 cup of old-fashioned oats
  • 1 tsp chia seed
  • 1/2 tsp ground ginger
  • 1/2 nutmeg
  • 1/4-1/2 cup of Little Red Wagon Original Granola (lightly crushed)

Instructions:

  1. In your blender, add walnuts, shredded carrots, dates, oats, shredded coconut, chia seeds, cinnamon, ground ginger, and nutmeg, and blend until you have a thick, dough-like mixture.
  2. Prepare a parchment-lined baking sheet and roll the mixture into balls. Set them in the fridge for 15 minutes.
  3. In a microwave-safe bowl, melt the vanilla candy melts and let them cool slightly before they harden. Take the balls from the fridge, and dip each in candy melt, and place them back on the baking sheet.
  4. Sprinkle with granola and set aside until the candy melts set.
  5. Enjoy!
