As we mark a significant milestone at Little Red Wagon Granola, it’s time to look back with gratitude and forward with excitement. Over the past 20 years, what started at a humble farmers’ market stall in North Carolina, has grown into a brand cherished along the East Coast and SE Canada. Our simple mission, spearheaded by founders Hank and Yolanda Bravo, was to craft delicious, balanced homemade granola. Today, that mission remains at the heart of every batch we make.

Looking back at Little Red Wagon Granola’s origins, it’s incredible to see how our family-owned operation has flourished while staying true to its roots. Pumpkin Fudge Bites

As the crisp autumn weather starts to settle in and the leaves begin to change color, October is a great time to embrace all things pumpkin.  As you get your fill of pumpkin spice lattes or a pumpkin loaf, whip up a batch of our pumpkin fudge bites. They are a sweet treat that perfectly captures the essence of fall.

These fudge bites are a delightful fusion of creamy fudge and the comforting flavor of pumpkin. The addition of spices like cinnamon, nutmeg, and cloves brings a cozy warmth to each bite. Their bite-sized nature makes them easy to share and perfect for Halloween gatherings, cozy family nights, or even as a thoughtful gift for friends and neighbors. They can also easily be dressed up for festive occasions with a drizzle of white chocolate or with additional toppings like chocolate chips, caramel swirls, or even a hint of sea salt to elevate the flavor profile.

They’re sure to become a new fall favorite, and I hope they add joy and sweetness to your fall gatherings!

Ingredients:

  • 1/2 cup almond butter
  • 1/2 cup coconut oil
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp ground ginger
  • 1/2 tsp ground clove
  • 1/2 cup of melted milk chocolate
  • 1 cup of Little Red Wagon Pumpkin Patch granola

Other:

** You will need a silicone mold to make these fudge bites***

Instructions:

  1. Melt coconut oil, pumpkin, almond butter, maple syrup,  cinnamon, allspice, ginger, and clove in a saucepan over medium heat until well combined.
  2. Blend 1/2 of the granola until rough crumb consistency or oat clusters are gone.  Add to liquid mixture, and mix well.
  3. Add mixture to silicone mold and place in freezer for 5 hours or until frozen solid.
  4. Remove from molds, drizzle with melted chocolate, and top with remaining granola
  5. Enjoy!
