Big Apple Cider Cupcakes

Fall is finally here, and it’s the perfect season to dive into all things apple. As the air gets crisper and the leaves turn beautiful shades of red and orange, apple orchards are bursting with ripe, juicy apples.  Our Big Apple Cider Cupcakes are a great way to enjoy apples in the fall. The apple cider adds a unique, tangy sweetness that pairs perfectly with the cinnamon and nutmeg. With a swirl of creamy frosting, these cupcakes are as comforting as a cozy sweater on a chilly day. Whether you’re hosting a fall gathering, enjoying a quiet afternoon at home, or just need a sweet pick-me-up, apple cider cupcakes are the way to go. They’re easy to make and even easier to enjoy, making them a perfect fall indulgence. So grab some cider and granola, preheat your oven, and get ready to savor the flavors of the season!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup of melted and cooled butter
  • 1 cup of granulated sugar
  • 3 large eggs
  • 1/4 cup of apple cider
  • 2 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 cup of Little Red Wagon Big Apple Granola

For buttercream:

  • 2 1/2 sticks of butter softened
  • 2 1/2 cups confectioners’ sugar
  • 1 tsp vanilla extract
  • 3-4 tbsp of heavy cream
  • 1/8 tsp salt
  • 1 tsp of apple pie spice (cinnamon, ground nutmeg, and ground allspice)

Instructions: 

  1.  Preheat oven to 350°F. Place liners in cupcake pans and set aside.
  2. In a medium bowl, combine all dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg. Whisk together and set aside.
  3. In another bowl, add the butter and sugar. Whisk until well incorporated. Mix in eggs, vanilla, sour cream, and apple cider mix well.
  4. Add dry ingredients to wet ingredients and mix until incorporated.
  5. Scoop batter into liners and bake for 18-22 minutes or until a toothpick comes out clean. Remove from oven and let cool completely.
  6. While cupcakes cool, prepare buttercream. Mix butter in stand mixer or with handheld mixer until light and fluffy.  Add in powdered sugar and spices. Next, add in heavy cream, vanilla and salt.  Mix until combined and set aside until cupcakes are cooled.
  7. Once cupcakes are cooled, frost the tops of your cupcakes, sprinkle with Big Apple granola and enjoy.
