With April comes spring blooms and warmer days. As the days grow longer and the air fills with blossoming flowers, there is no other treat more synonymous with the onset of spring than carrot cake. Our Cosmo granola carrot cake muffins are a harmonious blend of classic carrot cake and the wholesome crunch of granola—a match made in baking heaven. The sweet aroma of cinnamon, nutmeg, and carrots is balanced with granola, which not only adds a delightful crunch but fiber and protein, a wholesome element to a usually indulgent treat. It’s the perfect balance of healthful ingredients and the richness of traditional carrot cake.
Ingredients
Muffin
- 2 cups all-purpose flour
- 1 1/2 tsp cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup oil of choice
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup milk of choice (we like this one)
- 1 1/2 cup grated carrot
- 1 1/2 cup Little Red Wagon Cosmopolitan granola
Icing
- 2 cups of Greek yogurt
- 1 cup of powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F, line your muffin tin with cupcake flutes, and set aside.
- Whisk together the dry ingredients and set aside.
- In a separate bowl, whisk together all wet ingredients, including grated carrots.
- Pour wet into dry mixing until well incorporated.
- Once mixed, place granola in a sandwich bag and beat slightly to break up any large lumps and nuts.
- Once complete, fold into batter, saving some for garnish.
- Spoon batter into cupcake flutes a little more than 3/4 full. Bake for about 20-25 minutes or until the toothpick comes out clean from the center of a muffin.
- While the muffins are baking, make the icing in a medium bowl. Mix yogurt, powdered sugar, and vanilla extract until smooth, then set in the fridge until the muffins are cooled and ready to frost.
- Once muffins are cooled, spread icing on the tops of muffins and sprinkle with remaining granola.
