Granola Loaded Sweet Potato Ingredients
- 1 sweet potato
- 4 Tbsp nut butter of your choice
- 1/4 cup Little Red Wagon Original Granola
- 2 tsp maple syrup or to taste

- Clean the sweet potato and lightly prick it all over with a fork.
- Oven roast sweet potato for 45 minutes to 1 hour at 400°F or until it is fork tender.
- Once lightly cooled, slice the sweet potato in half.
- Mash sweet potato lightly with a fork, keeping it inside the skin.
- Place nut butter in a small microwaveable bowl for 10-15 seconds or until pourable.
- Sprinkle half of the granola on each side of the potato.
