Oaty Apple Pie With Granola

 

We hope this year has brought you many things to be thankful for and that you are able to celebrate Thanksgiving with family, friends, and loved ones. If there ever was an official dessert for the month of November, it would have to be pie! If you are looking for a change from your usual pumpkin, try our oaty apple pie with granola!

This recipe embraces the best of the season by using apples, which are at their peak in the fall. Whether you prefer the tartness of granny smith apples or the sweetness of gala apples, feel free to adapt the pie to your favorites. The apple granola adds a wholesome element that complements the sweetness of the apples with a hearty and nutty flavor.  

Oaty Apple Pie Ingredients:

Pie filling and crust:

  • 1 frozen (thawed) pie crust or home recipe of your choice
  • 4lbs of apples red and green mixed (peeled, cored, and sliced or diced)
  • ½ cup of brown sugar, packed
  • ½ cup of granulated sugar
  • 1/3 cup of all-purpose flour
  • ½ tsp salt
  • 1 ½ tsp cinnamon
  • ¾ tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp of lemon juice

Granola topping:

Optional:

  • Vanilla ice cream
  • Whipped topping

Instructions:

  1. Follow prep. instructions for your favorite crust.
  2. Preheat oven to 350 °F.
  3. In a large bowl, add sliced apples, lemon juice, sugars, flour, spices, and salt. Mix until apples are evenly coated.
  4. Pour apple mixture into thawed pie crust and cover with foil.
  5. Set in the oven on a cookie sheet or pan and bake for 35 to 40 minutes or until apples have cooked down. 
  6. While the pie is baking, grab a medium-sized bowl, pour in apple granola and melted butter, and mix. Set aside.
  7. After 35 to 40 minutes or when the apples have cooked down, remove the pie from the oven and remove foil. Pour the granola mixture over the pie, covering all of the apple filling.
  8. Place the pie back into the oven uncovered and bake for an additional 15 minutes or until the topping is golden brown.
  9. Remove and let the pie cool before enjoying it.
  10. Optional: serve with ice cream or whipped topping.

  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • ¼ tsp allspice
  • ¼ cloves
  • pinch of salt

Instructions:

  1. Add pumpkin granola to a food processor and pulse to break up granola.
  2. Add peanut butter, pumpkin puree, honey, vanilla, spices, and salt to food processor.
  3. Pulse until blended into a sticky batter.
  4. Scoop out the batter with either a teaspoon or a small cookie scoop.  Roll into a ball and place on a cookie sheet with either parchment or wax paper.
  5. If you want to add festive sprinkles, sprinkle energy balls or place sprinkles in a small bowl and roll the ball around until covered.
  6. Place cookie sheet in the fridge for about 30 minutes or until firm. 
  7. Enjoy!

Introducing Our New Vegan Granola Bars

No secret here: We love granola. And, if you’re reading this blog, chances are you do too. That’s why we want to spill the crumbles and announce Little Red Wagon Granola’s new vegan granola bars! We’ve been working on this delicious new addition for a while because we wanted to perfect the details. Now that it’s available via our online store, here’s what you can expect!

You Asked for Vegan Granola Bars, And We Answered

We never ignore customer requests or suggestions because they improve our products. Over the years, we’ve been asked about the possibility of a Little Red Wagon Granola bar and stored your opinions and preferences in the vault—until now. 

We knew our customers wanted an allergen-free bar, so it’s dairy-free, gluten-free, and nut-free (with the exception of coconut). We checked those boxes without sacrificing flavor. Oh, speaking of that…

Yum Without the Yuck

So many mass-produced granola bars are marketed as healthy and do contain healthy things like fiber and vitamins. Unfortunately, they may also contain large amounts of high fructose corn syrup, palm oil, or an excessive amount of unhealthy fat. 

To offer a more balanced alternative, our new, chewy vegan granola bars contain the following ingredients in order of amount: 

  • Tapioca 
  • Rolled Oats
  • Crushed Oats
  • Baking Powder
  • Salt 
  • Cinnamon 
  • Chia Seeds
  • Pumpkin Seeds
  • Coconut Oil
  • Coconut Milk 
  • Molasses 
  • Maple Syrup 
  • Vanilla Extract 
  • Sweet Potato

The oats are packed with soluble fiber, resistant starch, protein, calcium, and several vitamins and minerals. Similarly, chia seeds contain all that, plus omega-rich fatty acids. In contrast, pumpkin seeds are rich in magnesium, lignans, and zinc. 

As a nod to our southern roots, we also included sweet potato. Obviously, it tastes great and is like nature’s pudding when cooked, but it’s also a nutritional powerhouse. This humble root vegetable has cancer-fighting anthocyanins and supports skin and vision health with beta-carotene. “Good with Coffee” Granola Cake

Our “Good with Coffee” granola cake combines the wholesome goodness of granola and the coziness of fall flavors such as cinnamon and clove. What better way to kick off a tranquil weekend morning than a sweet breakfast, a good book, and a hot cup of coffee?  

The granola cake can also make for a great afternoon snack and can be enjoyed with a dollop of vanilla ice cream. Of course, if coffee is not your thing, this cake is also great with an herbal or black tea.  Enjoy a relaxing window and savor life’s simple pleasures as the leaves start to get their beautiful fall colors and the weather gets crisper. Try our granola cake as a great start to your fall weekend!

Coffee Granola Ingredients: 

  • 1/3 cup coconut oil 
  • 2 eggs
  • 1/2 cup of milk of your choice
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 3/4 cup of wheat flour
  • 3/4 cup of all-purpose flour
  • 1/2 tsp clove 
  • 1 tsp cinnamon 
  • 1 tsp baking soda
  • 1 cup Original Granola (slightly beaten) 
  • 1/2 cup Original Granola for garnish (slightly beaten) 

 Instructions:

  1. Preheat oven to 350°F and line an 8×8 pan or small loaf pan with parchment or spray with cooking oil.
  2. Add brown sugar, eggs, vanilla, coconut oil, and milk in a medium bowl.  Combine until well mixed and set aside.
  3. Add flours, clove, cinnamon, baking soda, and salt in a separate small bowl. Mix until blended.
  4. Add wet mixture to flour and mix until just combined. Add the 1 cup of granola and fold into the batter.
  5. Pour batter into the pan and garnish with the ½ cup of granola.
  6. Bake for 25-30 minutes or until the cake is baked thoroughly.  Check for doneness by inserting a toothpick into the center of the cake and bake until the toothpick comes out clean.
  7. Let cool, slice, and enjoy!

How to Extend Granola’s Shelf Life

The prevailing wisdom is that granola has a shelf life of three to six months, if not longer. While granola is not a typical breeding ground for mold or bacteria, the oil and nut content might turn. A good indicator of this is a slightly bitter smell. Rancid oil will not make you sick, but the taste is unpleasant. 

To avoid spoiling or staleness, take half or more of your bulk supply, divide it into four quarters, place each parcel into an airtight container or tightly sealed bag, and store it in your freezer, where it can last for six months or more. 

You can keep the remainder of your fresh granola in its original bag. Just seal it properly after each use or place it in an airtight container. As long as it’s kept from light, heat, and air exposure, granola can stay fresh even longer than six months!

How to Revive Stale Granola

If the unthinkable happens and your granola turns (shudder) stale or mushy, fret not! There’s a quick, easy fix to resurrect its crispy texture. All you have to do is spread a layer of granola on a non-stick baking sheet. Then, heat it in the oven for five to six minutes at 400 degrees. Make sure you don’t put too much on the sheet; otherwise, it won’t toast evenly.

Take it out and rejoice in the crunchy revival! Allow it to cool completely before repackaging to prevent moisture from getting trapped inside and triggering the stale cycle again.

Cosmopolitan Granola Bites Ingredients:

  • 1 cup Cosmopolitan granola or your favorite 
  • 1/2 cup natural, creamy peanut butter or your favorite nut butter
  • 2 tablespoons chia seed
  • 1 tablespoon honey or maple syrup

  1. Pat pork chops with a paper towel so they are dry on all sides. 
  2. Divide yogurt in half and coat each pork chop with yogurt on all sides.
  3. Add granola to a food processor and blend until fine crumble forms. Transfer the crumble mixture to a plate. 
  4. Add garlic, salt, and pepper to the granola crumble plate. Stir to combine the mixture creating a rub on your pork chops. 
  5. Place yogurt-covered pork chops on the crumble mixture and coat all sides of each pork chop evenly with the granola rub. Lightly press the rub into the meat. 
  6. Cook pork chops on a grill heated to medium-high heat with oiled grates to prevent sticking. (Alternatively, you can sear in a pan on the stove over medium heat.)
  7. Make sure the internal temperature of your pork chop reaches at least 145 degrees which is about 4-6 minutes on each side. 
  8. Allow the pork chop to rest for at least 3 minutes before serving to allow the juices to redistribute.
  9. Enjoy with a glass of pinot noir or chilled chardonnay!
